5 Best Cremini Mushroom Substitutes (Pantry Swaps)

No ratings yet
Pick a cremini mushroom substitute based on whether you need the closest flavor (earthy umami), the best texture (browned/chewy), or an emergency swap (ready pantry items).

Ingredients

Best Matches
  • 1:1 Shiitake mushrooms (stems removed, sliced) Closest earthy-umami punch; slice thin so they brown and soften like cremini.
  • 1:1 Portobello mushrooms (gently chopped) Richer and meatier; choose medium caps and cook until moisture evaporates.
Good Alternatives
  • 1:1 White button mushrooms (sliced) Milder—boost with a pinch of salt and extra browning for similar depth.
  • 1:1 Oyster mushrooms (torn into bite-size pieces) Delicate and quick-cooking; use high heat and avoid over-stirring.
Emergency Swaps
  • ¾:1 Canned mushroom pieces (drained, chopped) Convenient but softer; drain well and sauté to drive off liquid.
  • ½:1 Dried porcini (rehydrated, chopped) Very concentrated; steep and chop, then use soaking liquid carefully if flavorful.
  • 1:1 Frozen mushrooms (thawed, squeezed dry) Can be watery; thaw and squeeze so they can brown instead of steaming.

Equipment

  • Large skillet
  • Cutting board and knife
  • Paper towels or clean kitchen towel (for thawed mushrooms)
  • Small bowl (for rehydrating dried porcini, optional)

Method

  1. Choose the substitute based on your goal: closest earthy flavor (shiitake/porcini), closest browning texture (portobello/frozen-soaked-dry), or mild coverage (button).
  2. Use the table’s ratio (1:1, ¾:1, or ½:1). For dried porcini, start lighter because it’s stronger.
  3. Slice/torn to a similar size as cremini pieces (thin slices for quick browning; bite-size for stews).
  4. Sauté at high heat until moisture is mostly gone—this is what makes mushroom swaps taste “cremini-like.”
  5. Taste the dish and adjust salt/umami; if it tastes flat, add a pinch more salt or a small splash of soaking liquid (only if using porcini).

Notes

  • Moisture management is the biggest success factor when substituting mushrooms: sauté until the pan is nearly dry before seasoning.
  • Match piece size so cooking time stays similar to cremini.
