Method
- Identify your use: baking (structure), sauces/dips (thickness), or smoothies (creaminess).
- Choose the substitute from the list that matches tang first, then thickness (texture).
- Apply at the 1:1 ratio shown; if the substitute is looser, reduce liquid elsewhere in the recipe.
- If using a “blended” substitute (cottage cheese or silken tofu), blend until completely smooth before measuring.
