- Choose your base: sumac for tang (closest), or lemon-pepper + a pinch of salt if you don’t have sumac.
- Blend herbs: mix dried thyme with oregano (2:1). Add marjoram to round the flavor if you have it.
- Add sesame: stir in toasted sesame seeds until the mix looks speckled and nutty.
- Taste and adjust: if it’s flat, add more sumac/lemon; if it’s too sharp, add a little extra sesame or herbs.
- Use as a 1:1 replacement for zaatar in recipes calling for topping, seasoning, or dipping mixes.
Notes
- For the closest match, prioritize tang (sumac) + thyme/oregano + toasted sesame.
- If using tahini instead of sesame, thin it with a teaspoon of water so it coats evenly.
