Ingredients
  

  • 4 large eggs whisked
  • 2 medium tomatoes chopped
  • 1 medium green bell pepper chopped
  • 1 medium onion chopped
  • 1 clove garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil for cooking
  • fresh cilantro for garnish

Method
 

  1. Heat olive oil in a pan over medium heat. Add chopped onions, bell peppers, and garlic, sautéing until softened, about 2 minutes.
  2. Add chopped tomatoes to the pan and cook for another 3 minutes until softened.
  3. Add paprika, salt, and pepper. Stir to combine and cook for 1 minute.
  4. Crack the eggs into the pan and stir gently. Let the eggs cook for 2-3 minutes until set but still soft.
  5. Serve the omelette immediately, garnished with fresh cilantro.

Notes

  • For extra richness, you can add a sprinkle of cheese to the eggs.
  • Feel free to add extra vegetables like spinach, mushrooms, or zucchini.
  • For more heat, try adding fresh chili slices to the dish.
