Method
 

  1. Wash and cut the fresh cauliflower into even, firm bite-sized florets for consistent cooking.
  2. In a mixing bowl, whisk together the flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, and pepper. Slowly add water or non-dairy milk to form a smooth batter.
  3. Dip the cauliflower florets into the batter, shaking off any excess to avoid sogginess. Arrange them evenly for cooking.
  4. Preheat the air fryer. Lightly spray the battered florets with oil. Cook at 400°F for 15-20 minutes, shaking halfway through for even crisping.
  5. Immediately toss the cooked cauliflower in the buffalo sauce (melted butter mixed with hot sauce) to retain crispness.
  6. Serve warm with ranch or blue cheese dressing, garnished with fresh herbs or celery sticks for a classic presentation.
