Ingredients
  

  • 8 chicken thighs or drumsticks skin on, bone-in preferred
  • 1.5 pounds Yukon Gold or baby potatoes cut into even chunks or use baby potatoes whole
  • 3 tablespoons olive oil extra virgin preferred
  • 1 lemon lemon juice and zest freshly squeezed and grated
  • 3 cloves garlic minced or powdered
  • 1 tablespoon dried oregano classic Greek herb
  • salt and freshly ground black pepper to taste

Method
 

  1. Pat chicken pieces dry with paper towels to promote crisping.
  2. Cut potatoes into even chunks if using large potatoes; baby potatoes can be used whole for quicker cooking.
  3. In a large mixing bowl, toss chicken and potatoes with olive oil, lemon juice and zest, minced garlic, dried oregano, salt, and pepper until evenly coated.
  4. Preheat air fryer to 400°F (200°C) for optimal heat distribution.
  5. Arrange chicken skin-side up and potatoes evenly in the air fryer basket without overcrowding, in one or two layers.
  6. Air fry for 25-30 minutes, shaking or flipping the basket halfway through to ensure even crisping and browning.
  7. Check the internal temperature of chicken with a meat thermometer; it should reach 165°F (74°C). Potatoes should be tender and golden.
  8. Let chicken rest a few minutes before serving. Garnish with fresh herbs or a squeeze of lemon if desired.
