Mix maple syrup, brown sugar, Dijon mustard, ground black pepper, and melted butter until smooth to make the maple glaze.
Preheat the air fryer to 350°F (175°C) for even cooking and caramelization without burning.
Score the ham steaks with a crosshatch pattern to help glaze absorb. Brush both sides with the maple glaze before air frying.
Air fry the ham steaks for 7 minutes. Flip, brush with remaining glaze, then air fry for another 5 to 7 minutes until caramelized and reaches an internal temperature of 140°F.
Let the ham steaks rest for 3 to 5 minutes to redistribute juices and set the glaze.
