Ingredients
  

  • 4 large eggs whisked
  • 1 cup feta cheese crumbled
  • 1 tablespoon olive oil for drizzling
  • 1 teaspoon garlic minced
  • 1 teaspoon paprika optional
  • ½ teaspoon salt to taste
  • ¼ teaspoon black pepper to taste
  • 1 teaspoon fresh oregano optional
  • cherry tomatoes optional, for added freshness

Method
 

  1. Preheat the oven to 375°F (190°C). Drizzle olive oil in a small baking dish.
  2. Add crumbled feta cheese to the center of the dish. If using cherry tomatoes, scatter them around the cheese.
  3. Crack the eggs into the baking dish, placing them around the feta. Season with salt, pepper, paprika, and fresh oregano.
  4. Bake in the oven for 10–12 minutes, or until the eggs are set but still soft in the center.
  5. Serve immediately, garnished with fresh herbs. Enjoy with toasted bread or pita.

Notes

  • Feel free to add other Mediterranean ingredients like olives or capers.
  • For a spicier version, sprinkle chili flakes over the eggs before baking.
  • Use any fresh herbs you like—basil or thyme also work well.
