Ingredients
  

  • 4 pieces boneless, skinless chicken breasts or thighs if preferred
  • 2 cups fresh spinach washed and stems removed
  • 1 cup heavy cream for the creamy sauce
  • ½ cup Parmesan cheese grated
  • 2 cloves garlic minced
  • 1 small shallot finely chopped

Method
 

  1. Season the chicken with salt and pepper. Heat a skillet over medium-high heat and sear the chicken until golden brown on both sides. Remove and set aside.
  2. In the same skillet, sauté the garlic and shallots until fragrant. Add the fresh spinach and cook until wilted.
  3. Pour in the heavy cream and stir in the Parmesan cheese. Simmer for a few minutes until the sauce thickens.
  4. Return the chicken to the skillet and spoon the sauce over it. Let everything cook together for 5 more minutes.
  5. Serve hot over pasta, rice, or with crusty bread.

Notes

  • For a richer sauce, stir in a bit of cream cheese or Gruyère.
  • Try using kale instead of spinach for a twist on the classic recipe.
