These cottage cheese egg bites are fluffy, protein-packed, and simple to make. With creamy cottage cheese and eggs, they’re the perfect on-the-go breakfast or a light meal that’s easy to prepare.

Ingredients
  

  • 4 large eggs whisked
  • ½ cup cottage cheese
  • ¼ cup cheddar cheese crumbled
  • 1 cup spinach chopped
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil for greasing muffin tin

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin with olive oil.
  2. In a bowl, whisk the eggs and then stir in cottage cheese, cheddar cheese, spinach, garlic powder, salt, and pepper.
  3. Pour the mixture into the muffin tin, filling each cup about three-quarters full.
  4. Bake for 12–15 minutes, or until the egg bites are set and lightly golden on top.
  5. Let them cool for a few minutes before removing them from the muffin tin. Serve immediately or store for later.

Notes

  • Feel free to add other vegetables like bell peppers or mushrooms for extra flavor.
  • These are great for meal prepping, so make a batch for the week ahead.
  • For a dairy-free version, substitute cottage cheese with a plant-based alternative.
