Ingredients
  

Protein
  • 2 lbs chicken wings split at joint, tips removed
Dry Rub
  • 1 tablespoon baking powder aluminum-free
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
Oil & Sauce
  • 1 tablespoon neutral oil avocado or canola
  • ¼ cup hot sauce optional, Frank's RedHot recommended
  • 2 tablespoon unsalted butter optional, for buffalo glaze

Equipment

  • Paper towels for patting wings dry
  • Instant-read thermometer

Method
 

  1. Preheat the air fryer to 400°F (200°C). Pat 2 pounds of split chicken wings thoroughly dry with paper towels, pressing firmly until all surface moisture is gone.
  2. Mix the dry rub in a large bowl. Combine 1 tablespoon aluminum-free baking powder, 1 teaspoon each of kosher salt, garlic powder, and smoked paprika, plus ½ teaspoon black pepper. Add 1 tablespoon oil and toss wings until evenly coated.
  3. Arrange wings in a single layer with gaps between pieces. Cook at 400°F for 12 minutes without opening the basket.
  4. Flip every wing and cook 8–10 more minutes. Skin should be deep golden and blistered — an instant-read thermometer at the thickest part should read 165°F.
  5. Toss in sauce if desired. Warm ¼ cup hot sauce with 2 tablespoons melted butter, add hot wings, toss to coat, and serve immediately.

Notes

  • Pat wings completely dry — moisture is the enemy of crispy skin
  • Use aluminum-free baking powder, not baking soda — soda leaves metallic aftertaste
  • Separate drumettes and flats at the joint for even cook time
  • Single layer only with gaps — overcrowding traps steam
  • Add sauce after cooking — toss hot wings so the glaze sticks
