Preheat the oven to 400°F (200°C). Pat the chicken thighs dry with a paper towel and season with salt, pepper, garlic powder, and paprika.
Cut the potatoes into chunks and toss with olive oil, salt, and pepper. Arrange them in a single layer on a roasting pan.
Heat a skillet over medium-high heat and add a bit of olive oil. Sear the chicken thighs, skin-side down, for 5-7 minutes until the skin is golden and crispy.
Place the seared chicken thighs on top of the potatoes in the roasting pan. Roast everything in the oven for 35-40 minutes until the chicken is fully cooked and the potatoes are golden and crispy.
Remove from the oven and serve the crispy chicken thighs with roasted potatoes. Enjoy!
