Ingredients
  

  • 4 pieces bone-in, skin-on chicken thighs
  • 4 medium Yukon Gold potatoes cut into chunks
  • 2 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste salt and pepper

Method
 

  1. Preheat the oven to 400°F (200°C). Pat the chicken thighs dry with a paper towel and season with salt, pepper, garlic powder, and paprika.
  2. Cut the potatoes into chunks and toss with olive oil, salt, and pepper. Arrange them in a single layer on a roasting pan.
  3. Heat a skillet over medium-high heat and add a bit of olive oil. Sear the chicken thighs, skin-side down, for 5-7 minutes until the skin is golden and crispy.
  4. Place the seared chicken thighs on top of the potatoes in the roasting pan. Roast everything in the oven for 35-40 minutes until the chicken is fully cooked and the potatoes are golden and crispy.
  5. Remove from the oven and serve the crispy chicken thighs with roasted potatoes. Enjoy!

Notes

  • You can add other vegetables like carrots or Brussels sprouts to the roasting pan for added flavor.
  • If you prefer spicier food, sprinkle some cayenne pepper over the chicken and potatoes before roasting.
  • For a burst of freshness, squeeze some lemon juice over the chicken before serving.
