Ingredients
  

  • 4 pieces bone-in, skin-on chicken thighs or drumsticks or boneless if preferred
  • 2 cups cornflakes or panko breadcrumbs crushed
  • 1 cup buttermilk or egg wash for coating
  • 1 teaspoon paprika adds smoky flavor

Method
 

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with a wire rack.
  2. Pat the chicken dry and season with salt, pepper, and paprika.
  3. Dip the chicken in buttermilk or egg wash, then coat in crushed cornflakes or panko breadcrumbs.
  4. Place on the wire rack and bake for 35 minutes, or until golden and crispy.
  5. Let rest for 5 minutes before serving. Enjoy!

Notes
