Ingredients

  • 4 pieces bone-in, skin-on chicken thighs or boneless if preferred
  • 2 large onions thinly sliced
  • 2 cups beef or chicken broth for braising
  • 1 cup Gruyère cheese shredded, for melting on top

Equipment

  • Large skillet For searing and braising the chicken
  • Oven-Safe Pan For melting the cheese under the broiler

Method

  1. Caramelize the onions in butter over medium-low heat, stirring occasionally, until golden brown.
  2. Season the chicken with salt and pepper. Sear it in a hot pan until the skin is golden and crispy. Remove and set aside.
  3. Deglaze the pan with broth, scraping up any browned bits. Return the chicken to the pan and let it simmer.
  4. Sprinkle shredded Gruyère on top and broil until bubbly and golden.
  5. Serve hot with mashed potatoes or crusty bread.

Notes

  • Use white wine instead of broth for a deeper flavor.
  • Try adding fresh thyme or rosemary for extra aroma.
