Method
 

  1. Prepare the chicken by patting dry with paper towels and seasoning with salt and black pepper on both sides.
  2. Heat olive oil over medium-high heat in a skillet. Place chicken skin-side down and cook without moving until skin is golden and crispy, about 6-8 minutes. Flip and sear briefly.
  3. Reduce heat to medium-low. Add butter, lightly crushed garlic cloves, and fresh herbs. Tilt pan to baste chicken with garlic butter.
  4. Cook and baste until the internal temperature reaches 165°F (74°C). Remove from pan and let rest.
  5. Deglaze skillet with white wine or chicken stock, scraping browned bits. Reduce sauce and drizzle over chicken.
  6. Serve chicken with garlic butter sauce spooned on top or on the side.
