Ingredients
  

  • 1.5 pounds boneless, skinless chicken breasts cut into bite-sized cubes
  • ¼ cup olive oil extra virgin
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon dried oregano
  • 3 cloves garlic minced

Equipment

  • Mixing Bowl For preparing the marinade
  • Grill or Grill Pan For cooking the skewers
  • Skewers Wooden or metal, for threading the chicken

Method
 

  1. In a bowl, whisk together olive oil, lemon juice, oregano, minced garlic, salt, and pepper.
  2. Add chicken cubes to the marinade and toss to coat. Let sit for at least 30 minutes.
  3. Thread chicken onto skewers, leaving space between pieces.
  4. Grill over medium-high heat for 8-10 minutes, turning occasionally, until fully cooked.
  5. Let rest for a few minutes, then serve with pita, tzatziki, or salad.

Notes

  • For extra char, cook over an open flame for the last minute.
  • Marinate overnight for deeper flavor.
