Ingredients

  • 4 chicken breasts or thighs boneless, skinless
  • ⅓ cup pomegranate molasses
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper freshly ground

Equipment

  • Mixing Bowl For preparing the marinade
  • Grill or Grill Pan For cooking the chicken
  • Tongs For flipping the chicken
  • Basting Brush For applying extra glaze

Method

  1. In a bowl, whisk together pomegranate molasses, honey, olive oil, garlic, lemon juice, smoked paprika, cumin, coriander, salt, and black pepper.
  2. Place the chicken in a dish or ziplock bag. Pour the marinade over the chicken, ensuring it's fully coated. Let marinate for at least 1 hour or overnight for deeper flavor.
  3. Preheat the grill to medium-high heat (375°F–400°F). Lightly oil the grates to prevent sticking.
  4. Place the chicken on the grill and cook for 5-7 minutes per side, brushing with extra marinade during the last few minutes.
  5. Remove from the grill and let the chicken rest for 5 minutes before serving. Garnish with pomegranate seeds and fresh parsley.

Notes

  • For a more intense glaze, reduce additional pomegranate molasses and honey on the stovetop until thickened.
  • Grill with the lid closed for a more even cook and deeper smoky flavor.
  • Serve with fluffy couscous, roasted vegetables, or a fresh yogurt sauce.
