Ingredients

  • 5 lb pork belly with loin skin-on
  • 2 tablespoons fennel seeds lightly crushed
  • 2 tablespoons fresh rosemary chopped
  • 6 cloves garlic minced
  • 1 tablespoon lemon zest
  • 1 tablespoon salt
  • 1 teaspoon black pepper freshly ground
  • 2 tablespoons olive oil
  • ½ cup white wine

Equipment

  • Sharp Knife For scoring the pork skin
  • Mixing Bowl For preparing the herb rub
  • Butcher’s Twine For tying the porchetta
  • Roasting Pan with Rack For even roasting and airflow

Method

  1. Lay the pork belly flat, skin-side up. Use a sharp knife to lightly score the skin in a crisscross pattern.
  2. In a mixing bowl, combine fennel seeds, rosemary, garlic, lemon zest, salt, black pepper, and olive oil to create a paste.
  3. Flip the pork belly over and rub the herb mixture all over the meat side.
  4. Roll the pork tightly into a log and secure it with butcher’s twine.
  5. Place the porchetta on a roasting rack inside a pan. Pour white wine into the bottom of the pan.
  6. Roast at 300°F (150°C) for 3-4 hours, basting occasionally with pan juices.
  7. Increase the oven temperature to 450°F (230°C) and roast for an additional 30 minutes until the skin is crispy and golden.
  8. Let rest for 15 minutes before slicing. Serve warm.

Notes

  • For extra crispy skin, leave the pork uncovered in the fridge overnight before roasting.
  • Adjust seasoning based on taste, adding more fennel or rosemary as desired.
  • Slice leftovers thinly and serve in sandwiches or alongside roasted vegetables.
