Ingredients
  

  • 1 whole chicken about 4 lbs
  • 2 tablespoons Ras el Hanout Moroccan spice blend
  • 3 tablespoons olive oil
  • 1 whole lemon zested and juiced
  • 1 tablespoon honey or maple syrup for caramelizing the skin

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix Ras el Hanout, olive oil, lemon juice, and honey to form a paste.
  3. Rub the spice mixture all over the chicken, making sure to coat under the skin as well.
  4. Place the chicken in a roasting pan and bake for about 1 hour, basting occasionally.
  5. Let the chicken rest for 10 minutes before slicing. Serve with couscous or roasted veggies.

Notes

  • For extra crispiness, broil the chicken for the last 5 minutes.
  • Store leftovers in an airtight container for up to 3 days.
