This omelette with vegetables and cheese is quick, flavorful, and endlessly flexible. Great for breakfast, lunch, or dinner, it’s a one-pan meal you’ll turn to often.

Ingredients
  

  • 2 large eggs
  • ¼ cup bell peppers diced
  • ¼ cup onions chopped
  • ¼ cup spinach roughly chopped
  • cup shredded cheese cheddar or mozzarella
  • 1 tablespoon butter or olive oil
  • 1 tablespoon milk or cream optional
  • ¼ teaspoon salt
  • teaspoon black pepper

  • Bowl To whisk the eggs

Method
 

  1. Heat half the butter or oil in a non-stick pan. Add bell peppers and onions and sauté for 2–3 minutes until softened. Add spinach and cook until wilted. Remove vegetables from the pan.
  2. In a bowl, whisk the eggs with salt, pepper, and milk or cream if using.
  3. Wipe the pan and add the remaining butter. Pour in the eggs and tilt the pan to spread evenly. Let the eggs cook undisturbed for 1–2 minutes.
  4. Once mostly set, add the sautéed vegetables and shredded cheese to one half of the omelette. Fold the other half over the filling. Cook for another minute until the cheese melts.
  5. Slide onto a plate and serve immediately.

Notes

  • Use any leftover cooked veggies—mushrooms, zucchini, broccoli, etc.
  • Swap cheddar with feta, goat cheese, or Swiss for a different flavor.
  • Make it a meal with toast, greens, or roasted potatoes on the side.
