Ingredients
  

  • 4 pieces boneless, skinless chicken breasts or thighs
  • ¼ cup balsamic vinegar for marinade and glaze
  • 2 tablespoons olive oil for cooking and roasting
  • 2 cups cherry tomatoes halved

Method
 

  1. In a bowl, whisk together balsamic vinegar, olive oil, garlic, salt, and pepper. Coat the chicken in this marinade and let it sit for at least 15 minutes.
  2. Preheat the oven to 400°F (200°C).
  3. In a large skillet, heat olive oil over medium heat. Sear the marinated chicken on both sides until golden brown.
  4. Add cherry tomatoes and any remaining marinade to the skillet. Transfer to the oven and bake for 15-20 minutes until the chicken is fully cooked.
  5. Let the chicken rest for a few minutes before serving. Drizzle extra balsamic glaze over the top and enjoy!

Notes

  • For a richer glaze, reduce additional balsamic vinegar on the stove until thickened.
  • Try adding fresh basil or Parmesan for an extra flavor boost.
