Ingredients
  

  • 4 pieces bone-in chicken thighs skin-on
  • 1 tablespoon olive oil for searing
  • 8 oz mushrooms sliced
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tablespoon fresh thyme chopped
  • 1 tablespoon fresh rosemary chopped

Method
 

  1. Sear the chicken thighs in a large pot with olive oil until golden brown on both sides.
  2. Remove the chicken and add onion, garlic, and mushrooms to the pot. Sauté until softened.
  3. Add rice to the pot and stir to coat. Pour in the chicken broth, and add thyme, rosemary, and bay leaf. Bring to a simmer.
  4. Place the chicken back in the pot, cover, and simmer until the chicken is cooked through and the rice is tender.
  5. Fluff the rice, garnish with fresh herbs, and serve the chicken on top. Enjoy!
