Ingredients

  • 2 breasts chicken boneless, skinless
  • 12 oz pasta penne or fusilli
  • ½ cup basil pesto store-bought or homemade
  • ¼ cup Parmesan cheese freshly grated

Equipment

  • Skillet For searing the chicken
  • Large pot For boiling the pasta

Method

  1. Season the chicken breasts with salt and pepper. In a hot skillet, cook the chicken for about 6-7 minutes on each side until browned and cooked through. Let the chicken rest for a few minutes before slicing it into strips.
  2. Meanwhile, cook the pasta in salted boiling water according to the package instructions. Drain and set aside.
  3. Toss the cooked pasta and sliced chicken together in a bowl with pesto sauce, ensuring everything is evenly coated.
  4. Serve the pesto chicken pasta with a generous sprinkle of Parmesan cheese and fresh basil for garnish.

Notes

  • You can add sautéed vegetables like spinach or roasted tomatoes for extra flavor and texture.
  • If you prefer a different pasta shape, feel free to use spaghetti, fusilli, or your favorite type.
  • For a spicy twist, add red pepper flakes to the pesto sauce.
