Ingredients
  

  • 2 medium potatoes diced
  • 4 large eggs whisked
  • 1 tablespoon olive oil for cooking
  • ¼ teaspoon salt to taste
  • ¼ teaspoon black pepper to taste
  • ¼ cup cheese shredded, optional
  • green onions for garnish

Method
 

  1. Heat olive oil in a pan over medium heat. Add diced potatoes and cook, stirring occasionally, for 10–12 minutes until crispy and golden brown.
  2. Crack eggs into a bowl, whisk them, and season with salt and pepper. Set aside.
  3. Once the potatoes are crispy, push them to the side of the pan. Pour the whisked eggs into the pan and scramble gently.
  4. Once the eggs are scrambled and cooked through, combine with the potatoes. Sprinkle with cheese and garnish with green onions if desired.

Notes

  • Feel free to add veggies like bell peppers or spinach for extra flavor and nutrition.
  • Use cheddar, mozzarella, or any cheese you prefer for this dish.
