Ingredients

  • 6 bone-in, skin-on chicken thighs about 3 lbs, patted dry
  • 2 tablespoons dry ranch seasoning
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon salt adjust if ranch blend is salted
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice fresh
  • 3 cloves garlic minced
  • 2 tablespoons fresh parsley chopped, for garnish

Equipment

  • rimmed baking sheet
  • Wire Rack optional but recommended
  • Oven-safe skillet for finishing sear
  • Instant-read thermometer
  • Pastry Brush for applying oil mixture

Method

  1. Preheat oven to 425°F (220°C). Line a rimmed baking sheet with foil and set a wire rack on top if available.
  2. Combine ranch seasoning, garlic powder, onion powder, smoked paprika, black pepper, and salt in a small bowl. In a separate bowl, whisk together olive oil, lemon juice, and minced garlic.
  3. Pat chicken thighs completely dry with paper towels. Brush each thigh with the oil mixture, then coat evenly with the seasoning blend, pressing gently so it adheres to the skin. Arrange skin-side up on the prepared rack.
  4. Roast for 25–30 minutes depending on thigh size. Check at the 25-minute mark with an instant-read thermometer — the skin should be golden and the meat nearly cooked through.
  5. Transfer thighs skin-side down into a dry, preheated oven-safe skillet over medium-high heat. Sear for 2–3 minutes until the skin is deeply golden and crackly. Do not move the chicken during searing.
  6. Pull the chicken when the internal temperature reads 165°F (74°C) at the thickest point away from the bone. Rest for 5 minutes, then garnish with fresh parsley and serve.

Notes

  • Pat the chicken skin completely dry before seasoning — surface moisture prevents crisping.
  • Season up to 24 hours ahead and refrigerate uncovered for deeper flavor, but add lemon juice only just before cooking.
  • Store leftovers in the fridge up to 3–4 days or freeze up to 3 months. Reheat in a skillet skin-side down for best texture.
