This creamy Russian beef stroganoff is made with tender strips of beef, sautéed mushrooms, and a rich sour cream sauce, served over buttery egg noodles for the ultimate comfort meal.

Ingredients
  

  • 1 lb beef sirloin thinly sliced into strips
  • 1 tablespoon olive oil for searing
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 8 oz mushrooms sliced
  • 1 cup beef broth low sodium preferred
  • 1 tablespoon Dijon mustard adds a slight tang
  • 1 cup sour cream full-fat for the best texture
  • 12 oz egg noodles cooked and buttered
  • 2 tablespoons butter for coating noodles
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper freshly ground
  • 1 tablespoon fresh parsley chopped, for garnish

Equipment

  • Large skillet For searing beef and making the sauce
  • Pot for Boiling Noodles For cooking egg noodles
  • Wooden spoon For stirring the sauce

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Sear the beef strips quickly until browned, then remove and set aside.
  2. In the same skillet, sauté onions until soft. Add garlic and mushrooms, cooking until mushrooms are tender.
  3. Stir in Dijon mustard and beef broth, scraping up any browned bits from the pan. Let simmer for 5 minutes.
  4. Lower the heat and stir in sour cream. Mix well until smooth, then add the beef back to the skillet.
  5. Cook egg noodles according to package instructions. Drain and toss with butter.
  6. Serve stroganoff over buttered egg noodles, garnishing with fresh parsley.

Notes

  • For extra richness, stir in a splash of heavy cream with the sour cream.
  • Swap egg noodles for mashed potatoes or rice if preferred.
  • Leftovers store well and taste even better the next day.
