Instructions
 

  • Sauté chopped yellow onion and minced garlic in oil until softened.
  • Season and brown boneless, skinless chicken thighs in a skillet to seal juices.
  • In the slow cooker, place chopped carrots first, then add long grain white rice, top with browned chicken thighs, and pour chicken broth evenly over all.
  • Cover the slow cooker and cook on low for 3 to 4 hours until chicken is tender and rice absorbs the liquid.
  • Stir in peas and fresh parsley during the last 15 minutes of cooking.
  • Remove from heat and let rest for 10 minutes before serving to allow even cooking and moisture absorption.
