Ingredients
  

  • 2 medium potatoes peeled and diced
  • 1 small onion diced
  • 1 small bell pepper diced
  • 1 clove garlic minced
  • 1 tablespoon olive oil for cooking the potatoes
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • 1 tablespoon fresh herbs optional, for garnish

Method
 

  1. Cook the diced potatoes in a pan with olive oil over medium heat. Stir occasionally for about 10 minutes until golden and crispy.
  2. Add the diced onion, bell pepper, and garlic to the pan, sautéing for 3–4 minutes until soft.
  3. Add the cooked and sliced steak to the pan and stir everything together. Cook for another 3–4 minutes until the steak is heated through.
  4. In a separate pan, fry the eggs sunny-side-up. Season with salt and pepper.
  5. Once everything is cooked, spoon the potato and steak mixture onto plates and top with the fried egg. Garnish with fresh herbs if desired.

Notes

  • Use leftover steak for a quick meal.
  • Try adding hot sauce or salsa for a spicy kick.
  • For extra creaminess, top with a dollop of sour cream or avocado.
