Ingredients

  • 1 can kidney beans drained and rinsed
  • 1 can black beans drained and rinsed
  • 1 can pinto beans drained and rinsed
  • 1 can fire-roasted tomatoes adds smoky flavor
  • 1 cup vegetable broth for depth of flavor
  • 1 small onion diced
  • 1 medium bell pepper chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin adds earthy warmth

  • 1 teaspoon smoked paprika adds depth
  • 1 tablespoon olive oil for sautéing vegetables

Equipment

  • Large pot For simmering the chili
  • Wooden spoon For stirring while cooking
  • Mixing Bowls For preparing ingredients

Method

  1. Heat olive oil in a large pot over medium heat. Sauté onions, bell peppers, and garlic until softened.
  2. Stir in cumin, chili powder, and smoked paprika, cooking for 1 minute to release flavors.
  3. Add kidney beans, black beans, pinto beans, fire-roasted tomatoes, and vegetable broth.
  4. Bring to a simmer, reduce heat, and cook uncovered for 30-40 minutes, stirring occasionally.
  5. Taste and adjust seasoning as needed. Serve hot with favorite toppings.

Notes

  • For a thicker chili, mash some of the beans while cooking.
  • To make it spicier, add extra chili powder or diced jalapeños.
  • For a smoky depth, add a splash of liquid smoke.
