Ingredients

  • ½ cup Low-sodium vegetable or chicken stock 1:1 substitute for white wine; keep warm (~140°F) and add ladlewise
  • ½ cup Dry vermouth 1:1 substitute; refrigerate after opening and use within 4–6 weeks
  • ½ cup White grape juice + white wine vinegar Use ½ cup juice + 1 teaspoon vinegar for ½ cup wine; adds sweetness + acidity
  • ½ cup Diluted lemon juice 1 tablespoon lemon juice + 7 tablespoons water = ½ cup; add in last 2–3 minutes
  • ½ cup Unflavored low-sugar kombucha 1:1 substitute; choose <4 g sugar per 100 mL and simmer 30–60 sec to reduce effervescence

Equipment

  • Saucepan
  • Ladle

Method

  1. Choose the substitute that matches your priority (closest flavor, non-alcoholic, or bright acid).
  2. Measure the replacement amount per the ratios above for each ½ cup white wine called for.
  3. If using stock, keep it warm (~140°F/60°C) and add ladle-by-ladle as you would wine; if using acid-heavy swaps, add later in cooking to preserve brightness.
  4. Taste and adjust: counteract sweetness with ⅛ teaspoon salt per ½ cup grape juice mix, reduce vermouth if bitter by 25%, or add a splash more stock to balance flavor.
