- 4 bone-in, skin-on chicken thighs
- 2 tablespoons Dijon mustard
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh rosemary, finely chopped
- 2 cloves garlic, minced
- ½ cup panko breadcrumbs
- 2 tablespoons olive oil
- Salt and freshly ground black pepper
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- In a medium bowl, combine Dijon mustard, fresh parsley, thyme, rosemary, minced garlic, olive oil, salt, and pepper. Stir until well mixed.
- Pat the chicken thighs dry with paper towels. Spread the mustard-herb mixture evenly over the skin side of each thigh. Press panko breadcrumbs onto the mustard-coated side to form a crust.
- Place the chicken thighs skin-side up on the prepared baking sheet. Bake in the preheated oven for 35 to 40 minutes, or until the chicken is cooked through and the crust turns golden brown and crisp.
