Ingredients
  

  • 4 large eggs whisked
  • 2 medium tomatoes chopped
  • 1 medium green bell pepper chopped
  • 1 medium onion chopped
  • 1 clove garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil for cooking
  • fresh parsley for garnish

Method
 

  1. Heat olive oil in a pan. Add chopped onions, bell peppers, and garlic, sautéing until softened, about 2–3 minutes.
  2. Stir in chopped tomatoes and cook until they soften, about 3–4 minutes.
  3. Add paprika, salt, and pepper to the pan. Stir to combine and cook for another minute.
  4. Crack the eggs into the pan, gently stirring them into the vegetables. Cook for 2–3 minutes until the eggs are set but still soft.
  5. Serve the scrambled eggs immediately, garnished with fresh parsley.

Notes

  • Add feta cheese or olives for extra Mediterranean flavor.
  • Feel free to add other vegetables like spinach or zucchini.
  • For extra heat, sprinkle some chili flakes on top.
