Ingredients
  

  • 1 pound ground beef 80/20 blend preferred
  • ½ small onion grated
  • 3 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cinnamon
  • ½ teaspoon salt adjust to taste
  • ½ teaspoon black pepper adjust to taste
  • ¼ cup breadcrumbs optional, for binding
  • 1 egg lightly beaten, optional for binding

Equipment

  • Mixing Bowl For combining ingredients
  • Grill or Grill Pan For cooking the kebabs
  • Skewers Wooden or metal skewers for shaping the kebabs

Method
 

  1. In a large mixing bowl, combine ground beef, grated onion, minced garlic, parsley, cumin, coriander, paprika, cinnamon, salt, and black pepper. Mix until well combined but avoid overworking the meat.
  2. Divide the mixture into equal portions and shape each into an oval around a skewer. Press gently to ensure the mixture holds together.
  3. Preheat the grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking.
  4. Grill the kebabs for 8-10 minutes, turning occasionally, until browned and cooked through.
  5. Remove from heat and let rest for a few minutes before serving.
  6. Serve with warm pita, tzatziki, or a fresh salad for a complete meal.

Notes

  • For extra juiciness, let the meat mixture rest in the fridge for 30 minutes before shaping.
  • If using wooden skewers, soak them in water for 30 minutes before grilling.
  • Leftovers can be used in wraps, grain bowls, or salads the next day.
